Until I have the time and energy to write some shit in here, here's a handy dandy wiki link.

[Personality Overview]

-Arrogant
Something he repeated quite often, before the end of the events of the game, was what his interpretation of his own fate was. Specifically nattering on a lot about how he'd been chosen by Calamity Ganon, how it was his destiny to bring Hyrule to it's knees and how he would usher in a new age of chaos and destruction. He's pretty convinced that he's the best thing since sliced bread, and further more, that everyone else is complete garbage.

He treats his own allies, the Yiga clan, like expendable tools rather than people, and openly insults the intelligence of both their leader, Kohga, and his second in command, Sooga, fairly consistently. Both Link and Zelda were originally considered to be easy prey, stupid children incapable of utilizing their gifts, while the heroes assisting them were just about good enough to make magical copies of for the purpose of killing his enemies. Astor is nothing if not totally assured in his superiority, even if he finds himself hobbled in some capacity. He's still smarter than everyone, better than everyone, and overall fated to be the most powerful being in all of Hyrule.

-Sadistic
Astor loves mocking people. It goes hand in hand with thinking he's better than everyone, and there's nothing he loves more than grinding salt into the wounds of his fallen foes. Openly taunting Kohga and Sooga after he slaughtered their foot soldiers to use their souls to control the Blight Ganons, mocking Zelda and Link as he attempted to overtake Hyrule Castle, using malice crafted images of their beloved friends as personal assassins to try and kill them, the list goes on.

While most of his cruelty is emotional and mental, it's safe to say he'd be more than delighted to deliver physical pain as well. He already does so in battle several times in the game, and it's probably not that comfortable to have one's soul ripped out of them either.

-Self-centered
He's The Best, you see. The very best, no one is better than he is. Everything he does is in service to himself, even working to resurrect Calamity Ganon is ultimately to empower himself first and foremost. No one else in the world matters to Astor but Astor, and he'll step on anyone else, kill anyone he has to, work with anyone he needs to, in order to realize his goals.

-Intelligent
Granted there are reasons, good reasons, why Astor thinks he's the hottest shit around. The man isn't stupid, and does actually have genuine skill in fortune telling and magic. He managed to work out how to use the Giant Ancient Core that he carries around as both a fortune telling device and a magic focus, despite the fact that it's considered advanced technology that not even many devoted experts in the present day in Hyrule can reliably use. He's well spoken, and can in fact figure out what to say if he's trying to get someone on his side, even if it isn't always the most complimentary.

Astor is an accomplished mage as well, capable of casting powerful, destructive spells and erecting near impenetrable shields when in possession of the Giant Ancient Core, as well as summoning simulacrums made of malice, a physical manifestation of Calamity Ganon's corruption.

-Ambitious
As was stated, he'll step on anyone, kill anyone, ally with anyone in order to recognize his goals. No task is too brutal for him, and no boundary too sacred in the interest of attaining success. Astor sees himself as Hyrule's next ruler, and Hyrule's next god, and has no intention of giving up any of his goals any time soon.

-Treacherous
He'll only make friends if it serves him, he'll only build relationships if it benefits him in the end, and when he's done with someone, he'll throw them in front of him as a step stool. Astor ripped out the souls of the Yiga clan foot soldiers serving him in order to gain control of and fuel the Blight Ganons, and presumably killed Sooga as well, though Kohga managed to escape his attack. People as a whole generally seem to exist just as tools to Astor, and should he see it more beneficial to stab someone in the back then keep them around, he'll do so in a heartbeat.

-Manipulative
Goes along with being treacherous. While he's not exactly a silver tongued sweet talking serpent, Astor will typically use any kind of leverage he can get to get someone he sees as useful on his side. With the Yiga clan, it was his prophetic visions of Calamity Ganon's return, spinning himself as the custodian of the Harbinger. Necessary, powerful, the only way they could ever realize their goals.

It's safe to say that this is a route he'd take with most other people too, this implication that he's needed, somehow. No doubt leaning hard upon his own gifts of prophecy, his usual aim is to make himself irreplaceable to someone, instilling the idea that without him, they would surely languish and eventually fail.
